This meant partnering with Original Sunshine and using their first-of-its-kind gluten-free wheat-based flour made with regeneratively farmed ingredients. We don’t settle at Last Crumb, so we made sure to source the finest ingredients and wouldn’t compromise on taste or texture until we got it right. We set out to not only make the best gluten-free cookies to ever exist, but to make these cookies so good that even people who aren’t gluten-free would come back for seconds.

ALB: Was there much trial and error involved when working on these recipes?ĪA: Absolutely! This was a labor of love. Fold in the toffee bits, then using a measuring cup, scoop out 9 equally sized cookie dough balls. Mix in the flour, corn starch, salt, baking powder just until the mixture disappears. Each box comes with a dozen indulgent cookies in flavors we've given fun names to like I Lava You, which is a chocolate lava cookie and Birthday Boohoo, a play on a birthday cake cookie. Add in the egg and vanilla and mix until incorporated. Bake for 9-11 minutes or until lightly golden brown on the edges. Lightly sprinkle the cookie dough balls with flaky sea salt. Using a 2 T size cookie scoop, scoop the cookie dough and place on the prepared baking sheet. Original Sunshine gluten-free flour ©AudreyMa ALB: Are all of the cookie flavors versions of already released cookies (like the lava one?) or did you create new cookies?ĪA: We’ve taken four of our most iconic classic flavors and put a gluten-free twist on them using Original Sunshine gluten-free flour. We tend to bring back collections based on popular demand, so that is generally how we’ll determine whether the Gluten Free Collection will make another appearance in the future. There’s too many dry, tasteless gluten free cookies on the market currently, so we had our work cut out for us. We knew we had to create something that catered to that audience and tasted just as good as our original recipe.
